The challenges facing cookery schools
The capacity is the worktop
Ten stations, ten participants. An eleventh has nowhere to chop, and taking them degrades the class for everyone.

The menu determines the shopping
You do not shop for an unknown number. If sign-ups stay open until the night before, you either buy too much or run short.
With Kagenda
Each service gets its own slots: some in the morning, others late in the day.
Hours per service
Corporate team building takes the whole kitchen
A weekday format, a different capacity, an invoice going to a purchasing department and a date blocked months ahead.

Allergies and diets
Discovered on arrival, they force you to improvise. Asked at sign-up, they become part of the preparation.

Practical guide: Cookery schools
- Each class's capacity is the number of stations, not the size of the room.
- Close sign-ups forty-eight hours before: that is the notice that makes shopping possible.
- A required "allergies and diets" field: the constraint goes into the preparation, not the improvisation.
- Create the corporate hire as a separate service, with its capacity, price and deposit.
- Open the booking horizon to three months on themed classes: they get bought as gifts, a long way ahead.
- Payment at booking rather than a deposit: on a class, the ingredients are bought before it happens.
Frequently asked questions
How much does a cookery class cost in the UK?
Around £75 to £180 for a half-day class with ingredients, and £200 to £400 for a full day. Set your own prices.
What food hygiene rules apply to a cookery school?
You are a food business, and the first step is not optional: register with your local authority at least 28 days before opening — registration is free and cannot be refused, but failing to register is an offence. You then need documented procedures based on HACCP principles, appropriate food hygiene training for staff, and premises that meet the structural requirements of Regulation 852/2004 as retained. Environmental health will inspect and give a Food Hygiene Rating, which must be displayed in Wales and Northern Ireland and is voluntary in England. Allergen information for the fourteen named allergens is a legal requirement, including in what participants cook and take home, so collect and record allergies at sign-up.
Can I close sign-ups a few days before the class?
Yes, with a booking cut-off.
How do I handle a corporate hire?
As a separate service, with its own capacity, price and deposit.
Can I collect allergies at sign-up?
Yes, with a required custom field.
